Morgado de Sta. Catherina é referência dos vinhos Arinto da região de Bucelas, transportando a herança secular dos grandes vinhos brancos da região. A história do Morgado de Santa Catherina, no qual se incluía a Quinta da Romeira, remonta a 1703, ano em que foi instituído, cumprindo as intenções de D. Catarina de Bragança, rainha consorte de Inglaterra. Vinho proveniente de uvas da casta Arinto, das vinhas da Quinta da Romeira, com vindima manual. Os mostos fermentaram em cubas de inox e em barricas de carvalho francês. As percentagens foram convenientemente ajustadas, por forma a permitir que a madeira ficasse bem integrada, sem prejuízo da frescura, dos aromas e sabores característicos do Arinto. Durante os 8 meses de estágio em barricas de carvalho francês, promoveu-se a integração do vinho com a madeira, recorrendo a battonage. Após este período, o lote final foi executado, estagiando em cuba de inox até ao engarrafamento.
