Vinification of the Alabastro Red Wine 2021: the vinification of the Alabastro wine is carried out in the new and modern winery at Quinta do Carmo in Estremoz. A traditional vinification is used, with short macerations where the grape varieties are vinified separately in stainless steel vats at controlled temperature, to preserve the fruity aromas. At the end of fermentation, the batch is made, thus creating a modern, young and fresh wine.
