Vinification of Quinta Vale Dona Maria Vinha da Francisca Red Wine: All grapes are handpicked, carefully selected on the sorting table, and destemmed before entering the granite lagares (treading tanks). All grapes are foot-trodden in lagares and then ferment for 7 to 10 days at temperatures of 22º to 27ºC in the lagares or in stainless steel tanks with manual pump-overs. The wines are racked into new 225L French oak barrels where malolactic fermentation takes place.
