Vinification of BoaVista Reserva Red Wine in 3 Liters: manual harvest. Manual selection of clusters. Destemming and gentle crushing of the grapes. As fermentation vessels, traditional granite lagares with foot treading, stainless steel fermentation tanks, and for small batches, containers in food-grade PVC or fermentation in new French oak barrels of 500 liters. Each of these types of fermentation gives the wine a particular style. Our winemaking philosophy is simple: gently extract all the characteristics of the grapes.
Aging: 100% in French oak barrels from different cooperages and with different toasting levels. After aging for 15 to 20 months, the different lots are blended.
