Vinification of Vinho 2 (Two) Quintas Branco:
The harvest date for each plot is decided after successive grape tastings in the field. Once the decision is made, the grapes are manually harvested and transported to the winemaking center, separated by grape variety and plot. This is followed by whole-cluster cold maceration for approximately 24 hours. The fresh grapes are gently pressed, and the must is transferred to underground tanks for decantation. Next, the must’s turbidity is adjusted, and fermentation begins. Around 90% of the wine ferments and ages in stainless steel tanks, while the remaining 10% ferments and ages in French and Austrian oak barrels of different capacities.
