The grape varieties chosen for this harvest were Gouveio and Viosinho, located on the Alijó plateau at an average altitude of 600 meters, in granite/transition soils, with an average age of 30 years, and a yield of around 4,500 kg per hectare. The grapes were hand-harvested into 19 kg boxes and subjected to a thermal shock (8 to 10°C) before processing.
