The harvest is done manually, with manual selection of the clusters. The grapes are destemmed and gently crushed. Traditional granite lagares with foot treading are used as fermentation tanks. Subsequently, the wine aged in French oak barrels for at least 18 months. All wines are sealed with natural cork. Since they are not filtered or cold stabilized, these wines may develop sediment with age.
