Vinification of Vallado Red Wine 2018 in 12 Liters: Approximately 80% of the grapes come from vineyards planted in the 1990s, and 20% from old vines aged between 60 and 100 years. The grapes are vinified in stainless steel tanks with capacities of 5 and 10 tons, fully destemmed. The must ferments for about a week at 23º-25ºC with programmed automatic pump-over.
Aging: about 70% of the wine matures for 16 months in stainless steel tanks, and the remaining portion in 225-liter French oak barrels of the 3rd and 4th year.
