Vinification of Vinho Verde Torre de Menagem Alvarinho/Trajadura: Gentle pressing and decantation for 8 to 12 hours at a controlled temperature between 12 – 16ºC. Fermentation for up to 15 days with temperature control between 16 – 18ºC.
Maturation: in stainless steel tanks with controlled temperature and regular lees stirring for 3 months.
