Winemaking of Ribeiro Santo Grande Escolha Tinto 2016: The grapes were completely destemmed into small stainless steel lagares, where they macerated for 24 hours at low temperature before starting alcoholic fermentation with selected yeasts and controlled temperature. Alcoholic fermentation lasted about 15 days, with foot treading for good color and aroma extraction. After fermentation, it was transferred to new French oak barrels, where it remained for 14 months until bottling, and after bottling, it remained a minimum of 6 months in the bottle in a cool cellar.
