Vinification of the Ribeiro Santo Encruzado White Wine: Manual harvesting. Grapes from a single vineyard of the Encruzado variety, from Quinta do Ribeiro Santo. Total destemming and pressing. Selection of grape must, followed by cooling and low-temperature decantation for 24 hours. Fermentation in stainless steel tanks at around 15ºC for 20 days. 50% of the wine completes fermentation in new French oak barrels for 4 months.
