Winemaking of Ribeiro Santo Automatic White Wine:
Manual harvest. Grapes from an old Encruzado vineyard at Quinta do Ribeiro Santo. Grapes are pressed with 100% of the stems. Must selection and decantation at a low temperature. Fermentation in stainless steel vats with the wine’s indigenous yeasts, followed by aging in stainless steel tanks, being only filtered before bottling.
