After a very delicate pressing of the grapes, harvested at the end of August (Chardonnay) and in mid-September (Arinto), the musts fermented for 15 days in stainless steel tanks at controlled temperature. The elaboration, following the classic method with tirage, with refermentation taking place in the cellar for 25 days at 14 ºC, followed by a period of aging in bottle, on lees, for 20 months, for the first disgorged batch.
