Vinification of Quinta dos Frades Vinhas Velhas Tinto Wine: The vineyards for this wine are part of the best terroirs of the estate. Soil cultivation is done by animals. Grapes are handpicked, destemmed, and foot trodden in granite lagares. Fermentation takes place between 6 and 10 days with gentle extraction and temperature control.
Aging: 12 months in new French oak barrels with light toasting. Minimum of 12 months aging in the bottle.
