Vinification of Quinta do Carmo Red Wine: each variety is vinified separately and a traditional vinification is used with fermentation in stainless steel tanks and in presses with controlled temperature. At the end of fermentation there is a prolonged maceration (7 to 15 days). The wines age in French oak barrels for 12 months. At the end of the stage, the final blend of wine is made.
