The grapes, carefully selected, were pressed whole to obtain a must of high quality. The tear must was cooled and then decanted at low temperatures for 48 hours. Fermentation took place in stainless steel tanks at around 16°C for 20 days, followed by a period of aging on fine lees. Through the classic method, a second fermentation occurred in the bottle, allowing the development of unique characteristics in the sparkling wine, with refreshing and vibrant aromas that showcase the full potential of Alvarinho. Finally, in the last stage of production, after the fermentation was complete, disgorgement was carried out.
