Vinification of the Bairrada Wine Filipa Pato Nossa Red Wine 2021: From the beginning, from the vine to the bottle, the philosophy has been to create a wine that respects the expression of the berry without make-up, without artifice. Keeping ancestral winemaking techniques with minimal intervention. Our red wine comes from old vines from various areas mentioned on the map. The viticulture work is manual, respecting traditional techniques of the region, maintaining the natural vegetation without using herbicides. With a small percentage of whole grapes (about 10%), the vinification of the berry is done in an oak press inspired by the Roman times . Rests for 18 months in 500 liter French oak barrels, 80% used and 20% new. 2500 bottles and 110 magnums were bottled in 2011. All of them are manually sealed with natural wax to ensure good aging in the cellar.
