Vinification of Ervideira Invisible White Wine: From a selection of the best Aragonez lots, and as a result of a nocturnal harvest (moon harvest), this wine – Invisible – was born. The must is transported in a refrigerated truck to the winery. There, it is moved by gravity to the cold chamber, where it remains to decant for 24 hours at low temperatures. After this process, the must is inoculated with selected yeasts and the fermentation takes place at a controlled temperature of 12º C, for 15 days.
